Unless the caterer brought the whole oven, there's no way they're doing that justice.
To the uninitiated, roast whole lamb is a 3-part dish.
Part 1 - You slice off the spiced, fatty skin (crackling) and munch on that while they return it to the kitchen to re-spice and re-roast
Part 2 - You carve off the now proper cooked meat and chew on that while they again return the carcass to the kitchen to re-spice and re-roast
Part 3 - You rip apart the bones and gnaw the remaining meat on the bone
It's a hands on feast that is visceral, communal and yummy as heck.
