Worth noting this is one suggestion (I happen to consider too) but we cant be sure the rarity of submarines with a straight sail is down to modification. It may also be down to official media/organisational preference for the newer boats to appear in imagery. Amateur photography of (operational) PLAN submarines remains very scarce. Ideally we'd see images from multiple hulls at berth but those too are quite rare.

Does then the use of a broader and wider flank sonar array on the 711 hints at a shallow water / littoral operational focus?

Also the X-shaped rudders to boot.

And given the anticipated roles of the ROCN in Operation AR, such features present in newer rebel SSKs are to be expected (namely, to crawl on top of the seafloor and wait in littorial regions in order to intercept/ambush the PLAN's amphibious assault forces).

American and British SSN have broad/wide flank arrays too. I think this comes down more to the exact technical solution applied and the resulting way it is being integrated than a particular nautical focus.
