How can you tell?
How come you think it's WS-13 over RD-93? I can't tell at all but wasn't following the development of WS-13 so I was thinking these are definitely RD-93.
This is a huge surprise. I have already given up hope for J-31v2. I thought unless this project get some more money from the outside like the PLAAF, Chinese government or Pakistan that the project would be scuttled. I don't know if SAC got any outside funding to continue the program but in my opinion the Chinese government or the military should put money in the J-31 as this could be a good platform for export or even a potential future fighter for China herself.

Can anybody make out the EOTS on the 2.0? It seems to be missing (or obscured).

Doesn't look like it's there (judging from a few blurry pictures). The official model did show a EOTS window, so I guess the equipment is planned but not installed at this stage.

EOTS didn't show up on the J-20 until the 2011 prototype surfaced.

The FC-31 v2.0 is essentially analogous to "2011" from the J-20 program.
On second thought, the following image shows what could be an EOTS on its chin (black object):
