I have seen this configuration in other images as well, but not sure if they were also from airshows.

The size of the transparent glass of the housing (the aperture itself) and the associated "empty space" is not so much for the size of the sensor but rather providing a sufficient FoV for the sensor given the angle the sensor is situated at within the canted angle of the side of the nose.

Wouldn't it make more sense to have a small protrusion instead like the luneberg lense? Why bury it in the airframe with a reduced FoV?

There are RCS penalties to protrusions even if you apply RAM/use facets. This also introduces drag to the airframe. Unless absolutely necessary you want to keep things sticking out to a minimum.

Actually, I'm not quite sure. After all, the picture isn't clear enough and the angle isn't good either. In fact, I can't really tell whether these new planes are equipped with new engines or not.
