AFAIK, captains and political officers of PLAN carriers hold senior captain rank. Heads of major departments serve under XO. Since the head of aviation support (not exactly a very senior position compared to CAG or air boss) is already a senior captain, it's reasonable to assume Fujian's XO will also have the rank senior captain.
Plus Fujian will embark and train with J15T (another first for PLAN), a highly experienced and capable CAG will probably be assigned which means another high ranking senior officer. Thus, there will be at least five senior captains (CO, XO, CAG, political officer, head of aviation support).
He'll end up a cook on Type 005 nuclear carrier.

The mooring test is also called "dock test". The main purpose of mooring test is to check the quality of hull construction and the quality of installation and reliability of various machinery, systems, pipelines, equipment, instruments, meters, armaments, special devices, etc.
During the test, the carrier is moored alongside the quay and all equipment is switched on to check the operation of all equipment at full capacity while stationary. While the time required for the mooring test depends on the operation of the equipment.
It is understood that the fact that the carrier has entered the mooring test phase indirectly indicates that the outfitting of the carrier is largely complete.
The completion of outfitting indicates that the external navigation facilities and the internal facilities (like living, combat etc.) of the carrier have been installed and have become a truly complete aircraft carrier.

Mooring trials test primarily the main propulsion while the ship is at berth. They do not indicate a significant completion of outfitting, notably of navigation sensors, communication systems and of course other vital aspects such as the catapults, aircraft maintenance and support facilities (elevators, weapons elevators etc).
