36 fixed-wing fighters + 12 rotary-wing aircraft is about right. The Kitty Hawks could theoretically carry up to 90 aircraft, but that's from the 60's. In her 2000s configuration, the USS Kitty Hawk only had a capacity of 70 aircraft. Even then, you don't want to carry more than 70-80% of your capacity because you need space for maintenance and other operations on board. That considered, 50-ish aircraft total is perfectly reasonable.

Also consider that the J-15 is a big fighter, measuring in at 22 metres long (vs the F/A-18 E/F which is just over 18 metres long), which means that it takes up more space. For reference, the Kitty Hawk's standard air wing in the 2000s was only 40 fixed-wing fighters. If the 003 can carry 32-36 J-15s, 3-5 AEW aircraft, and 10-12 helicopters, I would be quite satisfied.
That would be a poor air wing size given the carrier size. You forget that back in the days of the Kitty Hawk the USN was using large fighters like the F-14, not to mention goliaths like the A-3 and A-5.

Via Chinesetiger 1986. the difference in construction method between JXC and Dalian

The construction of the Type 002 vs Type 003.

The Type 002 still needs to laying the keel, whereas the Type 003 only relies on the super large modules.

Like QE and Ford construction method?

So, is it confirmed that 003 will be conventionally powered? .. if it is the case I am hoping powered by Chinese gas turbine engines, perhaps scaled up of QC-280 or perhaps R0110

But I am hoping 003 is a nuclear powered carrier :)

And then people realized, "oh wait, we could run things more smoothly if we took off some planes so that there's more space to work with," which is pretty much what happened.

Doctrines evolved.

I don't doubt that in wartime, an 80,000-ton carrier can pack on an airwing of 70-80 aircraft if need be, but this is completely unnecessary in peacetime and would just be an inconvenient source of accidents.

I'd also wonder how many of the Kitty Hawk's fixed wing complement of the time were made up of the larger aircraft like F-14s or A-3s and A-5s. In the case of 003, its initial fixed wing complement will likely be made up entirely of J-15s, so 36 J-15s might be something equivalent to 36 F-14s in terms of deck space.

Can we please concentrate on the carrier and leave out discussions on future air wings here?

003 or 004 and 002 carriers modules comparison chart, approaching the same angle, 002 just slightly looking down, 3or4 slightly looking up, so it is easy to see.
