I hardly see any picture of the square sailed Yuan anymore of late. I am going to assume that existing older Yuan's have been retrofitted or retrofitting in progress, to the 039C standard.
I am not really knowledgeable in shipbuilding. But I'd guess the replacement of sail being a time consuming upgrade. Would that also indicate wider modernization? If they replaced the sail, electronics, masts and sonars wouldn't be extra hard.

You don't need to replace the sail structurally. What is changed is the outer skin or the outside of the sail. Given the double hull nature of the Yuan, the skin of the sail is a non structural, non pressurized part.

The rest of the changes might be internal and electronic, masts, sonars, computers, displays etc,. I suspect the subs are also being converted to lithium battery.
