J-15D. Likely a newly released old image.

How's the J-15T, the CATOBAR variant of the J-15 been doing so far?

With the launching of the Type 003-class aircraft carrier expected within this year, J-15Ts would be needed very soon.

Very soon is relative. Even if 003 launches this summer, it'd need another 6 months of fitting out, at least. Then perhaps a year of various tests and certifications and modifications. And even when commissioning happens, first the ship's crew will need some training before first air wing training starts. So it's not unrealistic to expect that there won't be carrier ops training on 003 before summer of 2024.

It makes sense to put those upgrades in. J-15T should also have new avionics and cockpit.
They could have ported over systems from J16. I do think that carrier based heavy fighter should be twin seater. Much like the F14. You have single seater J-35 to clear the skies and you have J15 to do strike /anti ship and J15D to do EW.
