During the Gulf War in 2003 the USN outfitted two LHA/LHD as pocket/Lightning carriers. Each deploying 20 Harriers.

Has the MN settled on how many cats for PANG yet? From what few official sources are available it looks to be 2 cats like the CDG.

Then there's artist rendering like that video showing 3 cats, but what's their basis for it?

The artist has made a very detail job on the cgi and with the latest info and he even impressed the Marine Nationale itself which has made the above video her own take on the future.
