A rough breakdown? Sure.

Russia:
120-ish Su-34
around 90 Su-35
20 Su-30M2
120-ish Su-30SM
22 Su-27SM3
around 50 Su-27SM
15 or so Su-33

Perhaps 50-70 unmodernized Su-27 left around, mostyl UB variants.

China:
roughly 10-20 Su-27UBK
around 100 J11A
Around 220 J11B
little under 100 Su-30
24 Su-35
25 - 30 J-15 (various subvariants included)
80 or more J-16

Even for 550 to 520 ratio Ruaf estimate is on the high end while the Chinese estimate is on the low end. It's perfectly possible J-16 numbers have shot up at over 100 airframes by now.

Does anyone have clear pictures of China's flanker variant cockpits? I want to know how many are still using the old dials and switches instead of using glass cockpit. Also, for those without a glass cockpit, is there any plan to refit them to a more modern standard?

Which one? J-11B is different from J-16 and former already eliminated the dials and switches.

ha, didn't expect J-11BS cockpit to be so much different to a single seat J-11B, I thought Su-27UB use the same cockpit as regular Su-27 in the front seat...

Indeed ... but I'm not certain if this is indeed a BS-cockpit. IMO it is not since the HUD is clearly not a J-11B/BS.

Indeed ... I would say a rough estimation would be even up to 140!
That is even more than i thought. How come we are suddenly at 140? When you spoke of your take on plaaf orbat you mentioned 2 frontline units operating j16 in full, and two more in conversion. With some (up to a dozen) more in two training/testing units?
