I think they could have gotten rid of this much more additional space:

I imagine there would've been various ways to further reduce the footprint of the island even further than they did, but the flipside would likely be additional cost, and more importantly time, to do that redesign work.

Personally I'm pleasantly surprised they had reduced the footprint of the island compared to Liaoning at all.

Would reducing more of the island have meant other extensive changes to re-stabilise the design, like the ballast tanks? Perhaps it wasn't worth to tinker too much. It was either take the existing kuz or a cleansheet design, for a one-off stobar cv.
