Considering the classified show is 85 min long, could it really be a parade of sorts? Showing all/most pla's planes?

Well, the list of aircraft that falls under "classified" is actually quite long - Z-20, Z-18, J-20, J-10C, J-15 (the catapult-launched version), plus a few other UCAV from time to time, since they are all still yet to be officially debuted they are officially "classified".
Well, it's just my best guess and wish.
1. The Chinese description of "classified aircraft" literally means "classified fighter", so Z-18 and Z-20 are not.
2. I don't recall AVIC ever displayed Chinese Flankers in Zhuhai Airshow for apparent reason, visitors may as well check up the Russian Knights' planes. So, probably no J-15.
3. J-10C is very possible, but one of the main theme of this year's show is the 20 "series", one Y-20 could hardly represent the "series".
But still, you could be right, a J-10C or J-15/A still meets "classified fighter" description, and I probably aim my wish too high.

Wouldn't showing any of the J-11/J-15 variants upset the Russians?

Well, a long list minus one entry still long enough to be called a long list, y'know.

If it does come to it, it won't be the first time the PLAAF pulled the rug that the airshow organizer stood on either...like back in 2008 they start to talk about open skies and almost 10 years have passed still at "mentioning it" stage, worse "occationally mentiong it" kind of deal. So until the airshow day itself I ain't gonna hold any hope about it. Safer that way.

correction: 2. AVIC did have a Flanker model (J-11) displayed in last airshow. But the provider of the "classified fighter" is PLAAF (the Chinese description), so it is not J-15 for sure.

Whats with 85 min duration? Individual displays last for 10 mins, acrobatic groups at most 40 mins. but double that??

The 85 minutes is greyed out with no flights, so it seems like an 85 minute break period... from 11:35 to 13:00, so seems like just a lunch break.

The classified aircraft is from 11:05-11:15... I think you've misread the chart.
