Does the Type 055 or any other Chinese warship possess the capability to intercept intermediate ballistic missiles like the American Aegis Ballistic Missile Defense System?

Not yet, at least no evidence of actual sea based tests.
However, since
we know that China has the capability of land based intercept since 2010.
we know 055 has huge 850mm-wide VLS and some silos are 9.1m deep.
we know they are all domestic techs developed by SOEs, which means they follow the same "GJB (国军标, National Military Standard)" and have little economical and political obstacle in conjunction.
So, by an educated guss, I think such capability is within PLAN's reach. They not yet have it because their sequence of possible threat has been different from USN till 2019.
However, things will change after US re-armed with M/IRBM in future.

When I watch the development of PLAN, I always assume two things, first, they know their situation much better than me, there are reasons behind their decisions; second, they are smarter than me, they are a group of people and they know what they are doing.

The land based ballistic missile interceptor is designated as HQ-19, which is an improved missile based on HQ-9. I believe they would have planned for a sea based version, if there is a need they could develop them (HHQ-19?) in near future.

The US has the Ticonderoga ddg so that the Arleigh Burkes is sufficient with 96 VLS.
How come the type 055 has 112 VLS, if 96 VLS is enough for the the Arleigh Burkes?
Because the mission profiles and types of missiles have changed. Don't get wrapped up in the number of cells, focus on the space and configuration. Some missiles get one cell of space, others might take 2 or 4. But the flexibility and space to do that and change the loadout is key. 112 cells is a lot more space than 96.

I can see why some people get hung up over this thing that the more VLS cells you have, then the more powerful the vessel is?........but i think it is really down to the quality of those missiles that are in the VLS cells that is the really key point. Regarding numbers, just because the Americans have a certain number of VLS cells on their warships, doesn't mean every other Navy has to follow suit exactly.........and if it really does come down to bragging rights then, lets wait until the 2 Russian Kirov Cruisers come back online, with what is expected to be a truly awesome missile load?
