Could this 6th gen go a similar way with the J-20 in regards to the engine? That it runs an interim engine(WS-15) before the intended one is introduced?

Even if surely not an accurate model of the real concept and as such more a generic placeholder, it is anyway a hint towards the PLAAF's future 6th generation fighter concept: Unveiled at the "13th Five-Year Plan" Achievement Exhibition in Shanghai on 24th December 2021.

Is that meant to depict all moving wing tip that function as control surfaces, or do those wing tip simply detach for ease of model transportation and set up?

No need to read that much into it..

Including Super Cruise ?
Concorde was supercruising with a thrust ratio of 0.38... and the old english electric lightning with a thrust ratio of a 0.8. Why not ? It's all about drag. 6th generation fighter without tail will have an advantage in drag reduction.

Yeah, with variable intakes and pure turbojet engine cycles. It is about thrust/drag *in supersonic flight* (not sea-level static), and WS-10 is not well-equipped to deliver sufficient dry thrust in that part of the envelope.
