At 1:20 the M20 does a "bounce" evasive maneuver in its ballistic trajectory, I am not familiar with ballistic missiles but is this even a feasible move? It just doesn't seem plausible to me as it would require a huge amount of energy to change course like that and a missile frame that can withstand the stress involved.

Terminal evasive maneuvers for ballistic missiles have been around for years

You can tell these are aimed for export since their range is capped at 280km which is just below the 300km limit specified in treaty.

The missile use re-entry interactions with the upper atmosphere to achieve change in trajectory, making it harder for path prediction and interception. Shown above are two basic variant. Sanger ballistics uses pebble bounce by adjusting re-entry angle and other parameters. Qian Xuesen ballistics lets the vehicle glide in upper atmosphere at hypersonic speeds (wave-riding) to extend range, which looks simpler but is more difficult to achieve than Sanger ballistics. The added bonus for both is that the re-entry section needs to deal with less deceleration and heating during the final descent stage due to lower terminal speed (but still fast enough to get through defense).

F-80 Medium Range Missile... I couldn't find further information. The seeker certainly looks interesting (good god, but why?)

1/ Use static image sensors
2/ Avoid hi precision rotating mechanism for motor
