I thought as much, I do the grilling at our house, but my wifey always did better with a steak on the stove. I fry sliced taters and onions, not so much since my little Dr. put me on a serious diet, but that Pork Belly sounds divine, and that crispy skin would be worth a trip to Texas.

So you BBQ as well??? love good BBQ.

My family are farmers and we probably eat too much meat than whats good for us.Our weekly diet consists of one day of sea food,followed by pork, beef lamb, and more pork lamb and beef.

Christmas is our main festive time and Christmas is shared between us a few friends and the farm workers who live on the farm as well.
We usually cater for 70-80 people.

We have a C hinese chap thats a very handy cook and he will be cooking Pekin Duck. For this we don't use the regular duck but a Muscovy which is more geese like than duck.. They are bigger and meatier than the regular duck. So for starters he will prepare about 6 of those.Then spit roast mutton, and seafood consisting of a copius amount of lobsters, and for something a bit mor exotic we have the gooey duck

Our Christmas timetable will be something like this

GEt up at 3.30ish am milk cows, 6am prepare xmas dinner, 12.30 pm scoff it down. 4pm back to work again for afternoon milking.

Wishing some of you friends could join us, two of my son-in-laws are US ARMY, Dan reserves now, Jeremy active duty reserve now, Mollie's boyfriend is a Marine, and Baxie's will finish basic in January..... he is loving it, and the fastest guy in his squad! went through the "gas chamber" the second time just for fun. So four of my seven daughter's are military wives/girlfriends and proud of it!

My ex wife divorced me in 1993, we had 4 daughters ages 4-14, my wife Donna had 1 older daughter 13, and twin boys, 10. We married in Feb 1994, one of the happiest days of my life. We had no desire to have any more children, 7 was a nut-house, (we had 3 10 year olds) We had all the normal troubles that blended families have, and several more for fun.

In the spring of 1997, we had an "early miscarriage", it was physically and emotionally very painful for my wife, rather heartbreaking, after losing that baby, we decided we would have another baby, and the Lord Blessed us with another set of twins. We specifically declined any genetic testing as Pro Lifers, and didn't ask their sex, even though we had many Sonagrams. In April of 1998 were were blessed with twin Daughters, Mollie and Baxie. The first 6 months we were rather certain we were going to die from lack of sleep and stress of caring for two very beautiful daughters, they were colicky, and didn't sleep well, and we were just exhausted.

so long story short, we have nine living children, one we know is in heaven with the Lord, and Donna's step son from her first marriage is part of our family and included with his wife and little girl in our family gatherings, so yes its a little crazy at our house, though I have a small army if I were to choose to "mobilize"....

Our son Jed invited one of his friends, who was in the military and later a civilian contractor, who is married to the sweetest girl from Chile, and have a gorgeous little girl. They also joined us yesterday for our large family meal, my wife loves the girl, and even more their beautiful daughter. Yes, it was Chaotic, and yes it was wall to wall children, my little brother Dan, his wife, two daughters and a son also joined us, so yes it is busy, and yes we do have to depend upon the Lord to meet all our needs, according to His riches in Glory! Yes we are blessed.

I am an only child :D seriously true but my Great grandmother was a family of thirteen children 19th Century one one wedding at this time...

And in 1789.. some French ancestors going for USA and yes ;)

I did look up some recipes, and they all sounded delicious, just my kind of cooking. I did not realize how important pork belly is in Chinese cooking. I do love "good Chinese" food, not crazy about sweet and sour chicken or pork, but love most of it tremendously.

Our son and at least one son-in-law do most of the cooking ???

When the weather turns off really cold, I will fix a big pot of Pinto Beans and Hamhock, prolly fry some potatoes and onions, and make a big cast iron skillet of "southern cornbread".

Cornbread is awesome in milk on the second day or so.

Pork Belly would be awesome with the beans and hamhocks, southern "coleslaw" with Helmans mayonnaise, "Yankees like sweet slaw" and I ain't no Yankee!

Happy Holidays to all. Christmas is a week from today, many of the other winter and New Year holidays are coming very soon.
