I would imagine it is because of it being an airborne IFV. So it needs to cut down on weight hence, the simple turret structure and hatches. Also it‘s a prototype, there might be changes.

Yes, a normal mortar is a tube with a fixed pin on the bottom... a primitive yet highly effective weapon. This is simply a moderately armoured vehicle to bring the same capability in a self propelled and mobile form.

its not designed to actively take part in front line combat, or actively receive any serious enemy fire. It is a vehicle designed to support frontline troops. So there isnt need for much more than steel armour perhaps eith some kevlar backing.

The sophistication within this weapons platform would be in the ammunition, sensors, communications (to coordinate strikes with front line units) and targeting systems.

The vehicle is old Mengshi I This is mortar carrier to provide fire support for either Airborne troop or light armor troop. Traditionally airborne troop are provided only with light armament like Machine gun, Light mortar or ATGW not good enough against armor troop. So the trend now is to equipped airborne troop with some heavy caliber 76mm gun or 80mm mortar that is not man portable therefore the need for carrier like Mengshi. But the problem with airborne troop is sooner or later they run out of supply since they normally drop behind enemy line to seize bridges, airport or to prevent flanking movement.

But the newest light armor gun is this 122mm PCL 161 with newer Mengshi carrier

Something like 81mm man-portable 4-man mortar team is only carrying (probably) 6 rounds per team. 1 round is ~15lb each. Usually packed in 3's. 1 man carrying base plate, 1 tube, 2 ammo carriers. Can't really do a sustained fire mission, just take out a fixed position.

If PLA has the capability to move and drop entire light SP gun, then you get much more flexibility, maybe slow down armoured units.
