A juicy target for Iranian anti-ship missiles. US carriers are completely useless against a regional power level country with decent anti-ship capabilities.

I think you are way over exaggerating in saying that, US carrier can defend well, from most anti ship missile, especially from Iran
No naval air defense system can defend against 100 supersonic/hypersonic anti-ship missile saturation attack likely combined with massive drone barrage. Iran can easily do such a barrage and even bigger perhaps. The days of Carriers are over when it comes fighting a shore based enemy. They can fight it at the high seas against other navies but they will be completely defenseless against a proper country with good anti-ship missiles.
They might also survive if they stay like thousands of KM outside of land. But that will limit the strike capacity of their planes too.
